Yellow Curry Rice Noodles with Tomatoes

INGREDIENTS

1/2-16 oz box (8 oz) Rice Noodles, any width 2 tablespoons peanut oil 2 medium onions, chopped 8 plum tomatoes, quartered 6 cloves garlic, chopped 2 tablespoons chopped fresh ginger 1/2 teaspoon allspice 1-14 oz can vegetable broth 2 tablespoons and 2 teaspoons Yellow Curry Paste 2 cups frozen peas 1/2 teaspoon salt

DIRECTIONS

  1. Soak Rice Noodles according to package for sauté.
  2. In sauté pan, heat peanut oil over medium high heat.
  3. Add onion and sauté for 2 minutes.
  4. Add garlic, tomatoes, ginger, allspice, vegetable broth and Yellow Curry Paste. Stir together well. Cook on medium heat for 3-4 minutes.
  5. Add peas, salt and drained Rice Noodles. Cook 3-4 minutes until noodles are tender/firm and vegetables combined. Serve.
