Grilled Fish with Sweet Red Chili Sauce
Grilling is a wonderful way to prepare bluefish or salmon. The sweet and hot flavors of Sweet Red Chili Sauce mixed with the contrasting twist of lime, make it a treat for the whole family!

INGREDIENTS

1 1/2 lbs bluefish or salmon fillets with skin
1 lime
1/4 cup Sweet Red Chili Sauce
1 teaspoon Fish Sauce or salt to taste
Oil
Optional: lime wedges, chopped basil

DIRECTIONS

  1. Heat grill to medium high.  Wash fillets and pat dry.
  2. Slice 3-4 slits into skin side of fillets. Cut slits deep enough to fill but not to cut through fillet. Fill slits with thin slices of one-half lime.
  3. Juice remaining half lime to measure 1 tablespoon.   Mix Sweet Red Chili Sauce, lime juice and Fish Sauce in small bowl.  Set aside.
  4. Oil grill grates and place fish, skin side down, onto grill.  Cover fish with chili pepper `mixture and close grill. Turn heat to low.
  5. Cook 6-8 minutes or until fish is firm, opaque and flakes with fork.  Carefully slide a thin spatula under fish and transfer fillets to serving platter.  Serve with lime wedges and chopped basil for a Thai accent.
