Sweet Red Chili Sauce combined with Fish Sauce give this dish a true Thai flavor. You can mix and match your vegetables.
INGREDIENTS
1/2-16 oz box (8 oz) Rice Noodles, any size 1 tablespoon oil 1 lb ground turkey 1 bunch scallions, sliced into small rounds 1 tablespoon Fish Sauce 1/2 cucumber, cut into thin half moons 1 small head of radicchio, cut into thin strips 1-7 oz bottle Sweet Red Chili Sauce 1/4 cup finely chopped cilantro
DIRECTIONS
- Put a large pot of salted water on to boil.
- In a large nonstick skillet or wok, heat oil over a medium high heat.
- Add turkey, scallions and Fish Sauce. Sauté until the turkey is cooked through and broken up. Drain in a colander.
- Boil Rice Noodles according to box directions. Noodles are done when they are firm yet tender. Drain noodles, rinsing quickly with lukewarm water.
- In a large bowl, combine the turkey, cucumber, radicchio, Sweet Red Chili Sauce, cilantro and noodles.
- Mix well. Serve immediately or at room temperature.
