Double Coconut Ice Cream
This extra coconutty ice cream only takes minutes to assemble and is vegan as well.

INGREDIENTS

1/2 cup sweetened coconut flakes
2-13.5 oz cans Coconut Milk
1/2 cup sugar
1/2 teaspoon vanilla* extract
1/4 teaspoon coconut extract
Optional: coconut syrup and fruit
*For an extra treat, substitute vanilla extract with seeds from 1/2 vanilla bean.

DIRECTIONS

  1. Toast coconut flakes in a dry skillet over medium heat, stirring until golden.  Transfer to plate to cool.
  2. Mix Coconut Milk, sugar, coconut flakes and extracts until sugar is dissolved.
  3. Pour coconut mixture into ice cream maker and follow manufacturer’s instructions.
  4. Thaw 15 minutes before serving. Serve with coconut syrup and seasonal fruit if desired.
