This extra coconutty ice cream only takes minutes to assemble and is vegan as well.

INGREDIENTS
1/2 cup sweetened coconut flakes 2-13.5 oz cans Coconut Milk 1/2 cup sugar 1/2 teaspoon vanilla* extract 1/4 teaspoon coconut extract Optional: coconut syrup and fruit *For an extra treat, substitute vanilla extract with seeds from 1/2 vanilla bean.
DIRECTIONS
- Toast coconut flakes in a dry skillet over medium heat, stirring until golden. Transfer to plate to cool.
- Mix Coconut Milk, sugar, coconut flakes and extracts until sugar is dissolved.
- Pour coconut mixture into ice cream maker and follow manufacturer’s instructions.
- Thaw 15 minutes before serving. Serve with coconut syrup and seasonal fruit if desired.
