Peanut Satay Rice

2 tablespoons oil
1 cup chopped onions
3 cups favorite vegetables, diced
1 tablespoon Fish Sauce
2 cups cooked chicken, cubed
3 cups cooked Jasmine Rice* (day old)
1-7 fl oz jar Peanut Satay Sauce
2 tablespoons lime juice
2 tablespoons chopped cilantro
* 1 cup uncooked Jasmine Rice equals 3 cups cooked
- Heat oil in large skillet over a medium high heat. Add onions and stir-fry until almost cooked.
- Add vegetables and Fish Sauce. Stir-fry until tender -crisp.
- Add chicken, Rice and Peanut Satay Sauce. Add lime juice to empty jar and cover. Shake until sauce (left on jar sides) and lime juice are combined. Pour into skillet.
- Stir-fry until all ingredients are heated through. Mix in cilantro and serve.
