Curried Avocado and White Bean Dip
3-4 cups depending on size of avocados
30 minutes to assemble
- 2 -3 tablespoons fresh squeezed lime juice
- 1 tablespoon A Taste of Thai Green Curry Paste
- 2 teaspoons A Taste of Thai Fish Sauce
- 3 ripe Hass avocados, peeled and pitted
- 1-15 oz can cannellini beans, drained and rinsed
- 1/3 cup olive oil
- 4 tablespoons chopped cilantro, divided
- Tortilla chips
| 1. | In a small bowl, whisk lime juice, Green Curry Paste and Fish Sauce until curry is completely dissolved. |
| 2. | Add curry mixture, avocados, cannellini beans, olive oil and 3 tablespoons of cilantro to a food processor fitted with a metal blade. Purée until smooth. |
| 3. | Spoon mixture into a bowl and garnish with remaining tablespoon of cilantro. Serve with tortilla chips. |
