Yellow Curried Fish

Yellow Curried Fish Recipe
The sweet and savory flavors of A Taste of Thai Yellow Curry Paste work well with any fish.

Ingredients
  • 2 tablespoons oil
  • 1 tablespoon and 1 teaspoon A Taste of Thai Yellow Curry Paste
  • 1 1/2 lbs fish fillets
  • 3/4 cup chicken broth*
  • 2 teaspoons A Taste of Thai Fish Sauce
  • 2 medium tomatoes, cut into wedges
  • 1-8oz package sliced mushrooms
  • 2 teaspoons chopped fresh basil or cilantro
  • A Taste of Thai Jasmine Rice, cooked
  • *A Taste of Thai Coconut Milk can be substituted for chicken broth.
Directions
1. In a large skillet, heat oil over medium heat.
2. Add Yellow Curry Paste and stir until dissolved.
3. Add fish fillets, cooking for 1-2 minutes on each side.
4. Stir in chicken broth and Fish Sauce. Boil for 2 minutes.
5. Add tomatoes and mushrooms. Simmer on medium heat until vegetables are cooked, about 5 minutes.
6. Add basil or cilantro and serve with a side of fragrant Jasmine Rice.
